It took us 10 years to make this great cheese. The 120 month Parmigiano Reggiano PDO manufactured by Caseificio Gennari, obtained from partially skimmed raw milk from Friesian cows, is at the top of maturation contributing to a unique exceptional flavor and texture. This represents Gennari’s biggest challenge!

The Friesian Cow is the mostly involved cow for the production of “classic” Parmigiano Reggiano. With 500 liters of milk per wheel, it offers milk that is ideal for long maturing processes that, thanks to our processing, maintain a unique creaminess and sweetness.

Parmigiano Reggiano 120 months is a concentrate of nutrients, rich in calcium, phosphorus and selenium, excellent for strengthening bones and dental health. It is easily digestible and lactose-free.

Texture

The paste is particularly crumbly and grainy, with an intense golden color. Tyrosine crystals are abundant, while the crust is hard and full of character, a sign of long maturation.

Flavour

The taste is extraordinarily complex and deep, with notes of hazelnut, almond, wood and spices, which evolve into a persistent aftertaste of dark chocolate and roasted coffee.

For a perfect pairing, enjoy this exceptional cheese with aged balsamic vinegar or a drizzle of honey for a touch of sweetness that complements its bold and complex flavor.
